Crepes with Strawberries



Recently I chatted with a childhood friend, Rosalie, and she commented on how her mother would make crepes for her and her sister for breakfast when they were children. It was a quick "on the run to catch the bus" breakfast, and the tradition has been carried on in their families.
Rosalie's family has ties to the Alsace Lorraine region of France which was once part of Germany. Thus, the crepes have continued to be a part of their family tradition.
Lina's Crepes
3 eggs
1/2 cup flour
3/4 cup milk
Put a pat of butter in a skillet, pour in a small amount of batter, swirl around, flip, brown the second side a little and then roll with sugar or fruit.

  2. Crepes and strawberries...it doesn't get much better than that. Our berries don't ripen until the first of June. It's going to be a long wait.

  3. Can't go wrong with crêpes and anything. I use to made cêpes and freeze them with a wax papper between. Always had them ready for great meals; it's been a while.

  4. I love crepes. I make the Hungarian version called palacsinta. They can be filled with jam (apricot or raspberry are the traditional ones) or a savory filling, the most often used is like chicken paprikas. One thing I have learned is important is to let the batter rest a few hours so the flour can thicken and you can add a little more liquid.

  11. Oh, that looks so good. Strawberries are one of my favorite fruits. We once had a French exchange student, only 13 years, stay with us for a summer and he made crepes for us.

  13. mouth watering! I like blintzes too. You did a great job these are gorgeous. You know these types of recipes are always simple in ingredients but it's the skill of the cook that makes that lovely presentation.

  14. I learned how to make crepes when we lived in Iceland. Even bought a special pan to make them. I was taught by my Icelandic landlady. I'll have to resurrect the pan as they look delicious.
